Does it count if I sear the scallops, then finish them in the oven? I'm going to have to wait for John to get home, then see if they're available at HEB. We get them from the Gulf, which is local enough for me, but it's also pretty seasonal. I can't say at this point whether or not we'll be celebrating that, but Scallops are my favorite seafood, and I've been thinking about adapting a receipe I've been working on my head from the Halloween episode of Beat Bobby Flay.
