Not so much a rant, maybe more like sounding off on the subject of crossword puzzles. I do two of them every day while I have my first cup of coffee. It's a way of getting my brain cells moving around and I enjoy the challenge.

Over the years, I've noticed something new, which I really wish the creators would stop doing. And something old that used to be helpful which now seems to have gone the way of the buggy whip.

It seems like half of all the puzzles now have circled letters. Now, the squares are small enough to begin with and when they put a circle inside the square it just makes it harder to fit the letter into the square.

Supposedly, the circled letters are supposed to help you figure out the puzzle theme or just a particular clue, but I can honestly say that I've never found the circled letters to helpful. Not even once. Of course, now I usually just ignore them.

I wish the puzzle creators would just give it up and let me fill in the squares with the correct word. That's just my opinion and I'm sure there are some people who enjoy the stupid circled letters.

What I miss and wish they would bring back are the little helpful hints like “2 wds” when the answer is not a single word, “hyph” when there's a hyphen in the word like Q-tipsTM, or “var” when the answer is a variation spelling like ameba instead of amoeba, for example.

It frustrates the hell out of me when I try to figure out a 10-letter word only to finally discover that it's two words, or even three. For all I know it's the editors to blame and not the creators, but I wish they still did that.

My rant isn't going to change either of those two things, and it's not like I'm going to stop doing crossword puzzles but I feel better now anyway so I'll climb down off my soapbox. For now, anyway.

A good Sunday for me is when I either can complete the New York Times Sunday crossword puzzle or finish at least 95% of it. The other four that I do on Sunday are relatively easy compared to the New York Times.
 
I have noticed though that the papers are printing the crossword puzzles ever smaller. Just wish I had the vision of an eagle.  ;D

The Time's Sunday Crossword is infamous for it's difficulty.  Not really my thing, but I've known lots of people who're into it.  (I like Scrabble?)  AFAIK, that one's supposed to be the best.

Kiddos did up the Xmas tree. I'm so proud of them. It looks so pretty. And they all cooperated and helped each other like my perfect wittle angels that they are.  ;D

I never did. I'm not a Christian. When my sister was little she absolutely loved Xmas. I never ruined it for her, but I never got into it. I always slept in on Xmas morning. One year I had my sisters little hands pushing me telling to wake up because it was presents time. I just wish it was over with. I wouldn't have anything to do with it if I had the option. I always end up spending a fortune and cleaning up the messes.  :facepalm:

Confit gizzards by slow poaching in duck fat until they are melt in your mouth tender.  But then slow poaching a shoe in duck fat would make it taste good.  Confit de chaussure?

We were at a restaurant yesterday and the people at the table next to ours were asking the waitress if they could order chicken livers. I had not heard the phrase, chicken livers, in a very long time. I admit eating them when I was very young, along with gizzards, but then it was all we had to eat.  Many things I no longer eat that I had eaten when I was young.

In culinary terms, there's actually several organs that get called "Gizzards," or under the general term Gibblets.  (Derived from a word for Garbage.)  Whatever you want to call them, they're pretty offal.

Sweetmeats are confections, and can even be Vegan.  Sweetbreads are typically red meat.  Beef, or especially Veal, but also lamb, pork...

I didn't come up with the terms, I just worked as a prep cook (Among other positions, but that's my fave) in up to 3 star kitchens, and resorts.  (Doc Martin's in the Taos Inn being my favorite.)

I'm also an excruciatingly opinionated, and pedantic amateur etymologist, but I don't mince words, I have my way with them.

Mincemeat (as in pie) isn’t meat either.  I have no point with that comment, but then that’s what we seem to be doing?

Back to the subject of offal.  It was all the poor folks could get, so they learned how to make the offal not awful.  Techniques we still use to turn something once considered throwaway parts into delicacies.

I made my confit de canard this week, but I was cheated in my duck purchase.  Whoever processed my duck stole the liver.  I used the neck, heart and gizzard in my duck stock, but could have poached the organs in the duck fat too.  The duck stock I reduced to a brown almost syrup, which I will use to flavor a pate one day soon.
