Part of tonight’s dress rehearsal feast.  Minus rolls and pies.  Ate until I was in pain.  And my son’s girl liked the oyster stuffing and rolls so much, she asked if she could take some home!  Happy eaters!  I’m thankful!

I hope everybody has a wonderful Thanksgiving.   I don't plan on being on much over the next 4 day (but hope to sneak on occasionally).     Leaving work early to get some last minute items.   Then tomorrow morning look for me on TV in the crowd at the Detroit Americas Thanksgiving Day Parade.   I'll be the one all bundled up because of the cold.

The baked chicken is browned to perfection, cranberry bread is WONDERFUL, got 5 minutes to go on the pumpkin pie (and the house is smelling TASTY),

I think my scalloped 9" pie pan is only about an inch deep.  With the pumpkin mix above, the pumpkin was domed ABOVE the level of the pan, a good quarter inch above the top of the crust.  Fingers crossed that it doesn't make a freakin' mess out of my oven!  I could probably have made (2) 9" pies with that much filling.  

NOT a fan of the Sprouts brand coconut cream after this (I swapped coconut cream for the coconut milk in the filling), as it was all clotted and I couldn't get it to homogenize with the stick blender no matter what I tried.  I'll go back to Natural Forest or Thai Kitchen brands for baking.  I'm... UNTRUSTING of the Aroy-D brand as it's always perfectly homogenized, even after it's sat in the refrigerator for a couple of days.  That smells like some sort of funny-biz, as none of the other brands do that.  They say "ultra high temperature" pasturization to kill bacteria, but what does that actually do?  Does it turn the coconut oil into a trans-fat?




edit:  Just finished dinner!  The pie eventually worked out OK, but it had me scared for a while that I'd wasted the effort.  It never firmed up in the oven, even though I left it for an extra 10 minutes with the aluminum foil off.  After a couple of hours in the 'fridge, it was *perfect*.  That's home-made coconut yogurt on top, as whipped cream is a no-no on this diet.

Very nice, my grandmother put oysters in her stuffing.  I haven’t done that yet, but I’m not sure why?  I still stuff the bird though and haven’t got sick yet in 55 years.
