Fried catfish, shrimp, and oysters with beans, slaw, and unlimited hush puppies.  Beer in mugs so cold, it forms ice rings...

I had a craving for catfish recently.  I think it’s been years since I had it.  We had seafood on Saturday, just a shack that does mostly carryout,.  I chose a soft shell crab sandwich because I love those, then I tried to get my Peruvian to order catfish so I could steal a piece.  She ended up getting a salad with grilled salmon, boring.  They had really good slaw there.  They also had hush puppies, but I didn’t order any, tempted though.  Her mom got cream of crab soup and a crab cake minus the bread, she’s embraced being a Marylander.

About 15 years ago I remember doing a Cajun themed meal for a meeting of a charity my then wife was helping out for a couple years.  I made fried catfish, crawfish etouffee, chicken/shrimp/andouille gumbo and grilled some alligator.  All but the alligator came out wonderful, alligator had been frozen and was watery.  Still, if you can remember a meal you cooked that long ago. . . . .

Hummus.

I had some pita bread getting a little stale and hate wasting food.  So I made toasted pita chips.

I roasted a whole head of garlic by cutting through the middle, roasting the base for a while over olive oil, salt and pepper, then added the garlic top half way through (the top burns faster than the bottom).  I had half a red bell pepper, so coated it with olive oil and roasted it too.

A can of chick peas and a half a jar of tahini, the garlic and the skinned red pepper in a food processer until smooth.

Topped with a few shakes of paprika, finely diced green onions, halved yellow cherry tomatoes and kalamata olives.

The hummus vanished.

I reserved some of the soft roasted garlic and smeared it on the sides of two ribeyes along with salt and pepper.  The steaks are now marinating in Worchester and soy sauces with a little Chinese cooking wine.

Inside every "God bless your heart" is a tiny "F**k you"

I was rather disappointed with my ribeye steak last night.  Despite the marinade, it was rather flavorless and chewy.  It was very lean, which ribeyes are typically not.  I think the lack of fat was most of the problem.

Last thing was a BLT with my own grown tomatoes and arugula as the ‘L’ on multigrain bread.  I prefer to substitute arugula for lettuce in sandwiches, it’s more flavorful and nutritious.

With you on the arugula. Love the flavor and texture. And we have an abundance of it out in the garden.

We went to a graduation party today. For dessert, they had a few options, I went with just a sugar cookie with a light frosting.  OMG.  I brought 2 cookies home. I'm enjoying one with an Old Fashioned right now. The other I plan to enjoy with coffee in the morning.
A cookie...so simple. So good.

Pepto. Last night my cousin was having a little get together and had made brisket and some sides. I think I had one to many home made jalapenos poppers because my stomach was not agreeing with me last night or this morning.

Banana bread chips.

Things I make myself involving oat flour, banana, egg, honey, and cinnamon. Tastes like a banana granola bar.

I had to look up pot noodles. They're instant noodles to which you add boiling water? But beef and tomato sounds nice, and like a red wine would be a good pairing :)

Is that what we call Ramen in the States?  Everyone in my house eats that stuff.  I have tried it a few times, but not a fan.

I got no issues with ramen as long as a lot of attention is paid to the prep and ingredients are largely from scratch.  I mean you don’t have to make your own noodles, but it wouldn’t hurt.

I need a Rioja, made a paella today with spicy andouille and chicken thighs.  I used a ton of saffron.

Pot noodles are regarded by some as cheap and nasty but I happen to love them. My favourite is beef and tomato and bombay bad boy. They used to taste a lot better before they removed all the additives lol. It's just a plastic pot with noodles and dried veg/soya in. You get a little sachet of sauce with it. Yum.
